Yep, I'm way behind on this one. The Lost podcast of 06 Dec 2006 talks a bit about "I Do" and not at all about "Not in Portland". ("I Do" being the last episode of the mini-season with the backstory about Kate, while "Not in Portland" being the first episode of the second half of the season with the backstory about Juliet.) Damon Lindelof and Carlton Cuse hosted and spent most of the show answering fan questions.
They began by discussing their casting choice of Nathan Fillion as Kate's husband Kevin. Lindelof and Cuse both consider him "an awesome actor" who excelled in Firefly. With only five scenes in the episode, they needed an actor who could win an audience and seem real in a very short time. They're also Whedon fans and they're looking for "geek cred". Ha.
To fans who keep asking if Kate has actually made the choice, they say, "Yes." She chose Sawyer. (My note: I guess some viewers must have gotten up for a snack right before Sawyer and Kate enjoyed each other in the cage in full view of the cameras--and Jack. Major plot point there. Tip: Don't leave Lost for snacks, no matter how hungry you are.)
As an offshoot of that question, is Jack's sacrifice noble or stupid? (His sacrifice being staying behind and holding Ben hostage on the operating table while Sawyer and Kate make an escape.) We don't know yet. Jack doesn't know they're on an island, so things could still twist and turn.
The storyline will be returning to the beach soon.
At Eko's funeral, Locke noticed the etching on Eko's Jesus stick that said, "Lift up your eyes and look north John". Is this a sign? From Locke's point of view, it is. He went into the sweat lodge looking for a sign from the island. He retrieved Eko from the polar bear cave, then Eko died shortly after. Locke must be wondering what it was all for. The quote seems to him to answer that.
Things we will learn by the end of this season:
1) In the second or third episode (ep 8 or 9), we will find out what's going on with Desmond.
2) We will find out if Ben was telling the truth about the island.
3) We will know if the Others and Dharma are/were connected.
4) Rousseau will show up again.
They would not even say what the title of "Not in Portland" refers to. I've heard from another source that the backstory will be Juliet's.

Did Kate do something illegal? Is she running from the law? Does she really like tacos? Their suggestion was to watch season one and two for the first two questions. The episode "I Do" also contains the answer. She does not like tacos.
Do you want us to become Christians? Are you trying to convert people? There is a lot of Catholicism on the show. There was even a priest. The Bible is a big source of inspiration for Lost. While they're not trying to convert anyone or promote any particular religion, they do want to show the world through the eyes of the characters, some of whom are religious. Also, the show is spiritual. The characters are not just lost on an island, but lost in their lives. Spirituality is an important part of human existence.
Will Lost return for season four? They hope so.
How could there be a second island? Sawyer, Jin, Michael, and Walt on the raft didn't see it. Sayid walked for two days on the beach and didn't see it. Sayid, Sun, and Jin took Desmond's boat and didn't see it. The island is very large. There is a smaller island off the coast of the main island.
How can Kate have shaven pits? Creative license with hygiene on the show.
What happened with the love scene between Rose and Bernard? They joked about this question.
Lindelof and Cuse confirmed that Sun and Jin get back to the beach with Sayid, even though they are not shown in the Lost sneak peeks.
A questioner asked if the cage scene between Sawyer and Kate was shot in a larger cage. No, it wasn't.
Who is the real leader of the Others? When will we find out? They can't answer that one. They did say that in the Bible, Jacob is the father of the twelve tribes of Israel and Benjamin is his youngest son. But then they backpedaled and said that might have nothing to do with the show. Keep your eyes peeled for Jacob. He'll be an interesting character.
